The article substantiates the use of hydrogen peroxide solutions as a sterilant in the dairy industry enterprises in the processes of aseptic bottling. The consumer qualities of hydrogen peroxide with the estimation of the toxicological properties and potential danger of this substance have been considered. The brief analysis of the hydrogen peroxide market in Russia was carried out and the tasks of further research aimed at reducing the negative effects of the use of concentrated hydrogen peroxide solutions were outlined.
